We present an easy take on a beverage found on a new cocktail list. It's a large-volume premix that is loaded with tastes of a holiday season, which makes it perfect for hosting a celebration. Save the extra cordial to use in brunch beverages, puddings, or to mix more rounds of this cocktail.

The Bikini Cocktail

Serves 10 people

To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Place all the ingredients into a pan, heat until it reaches a light boil, stirring until the sugar dissolves. Next, remove from the stove allowing it to reach room temperature fully. Transfer into a sterilised bottle, seal and refrigerate it in the fridge, it can be stored for up to four weeks.

For the Cocktail Base: Combine the specified spirits and syrup into one large bottle, allow it to infuse for an hour, then filter it , ideally through cheesecloth, so it's fully clarified.

When ready to serve: Pour 85ml of your batch mix to a mixing glass containing ice, and stir gently for a minute to cool it down. Strain into a chilled martini glass or a similar vessel, garnish with a few cranberries and finish with a brief mist of mandarin oil over the drink.
